Yes! I have finally manage to make and eat a totally green smoothie- and it was seriously delicious. I’ve found the progression of going from fruit smoothies to smoothies made from dark leafy vegetables difficult. I have taken it slowly and disguise the earthy taste of the vegetables behind fruit. A fruit smoothie was the base of my green smoothies and I simply started to add leafy veggies like spinach and kale in small amounts and increased the amount I added each time…baby steps! 🙂
But now I am a fully pledged green smoothie addict. They are so yummy and that revitalising energy that they give you should be bottled and sold. So for breakfast yesterday I made this bowl of green loveliness. It included:
- savoy cabbage
- 1 apple
- a few raspberries
- soya milk
- 1 tsp of honey
The benefits of green smoothies are endless!
For lunch yesterday I had my leek, swede and haricot bean soup with rice cakes. I also had an two oranges and a pear.
My snack was plain hummus with raw veggies:
I decided to take yesterday off from working out and cooking. So I decided to make the use of some leftovers that I had left in the fridge…
I put my Oriental Chicken Curry with multigrain noodles on a bed of wilted spinach and savoy cabbage. I don’t know why, but leftovers always taste so much better.
For dessert I whipped up baked apple slices with Greek yoghurt, carob nibs, sunflower seed butter and almonds.
I started today with my usual 3 mile run of intensity intervals and followed that with 5 minutes of Tracy Anderson’s mat workout. It was such a fab workout session and it was followed by a fab breakfast:
I had warm creamy oats made with soya milk and Green and Black’s Cocoa Powder, topped with macadamia nuts, cranberries and coconut…YUM! I love having warm oats on a cold and windy day like today. They are so comforting, like a hug in a bowl.
For lunch I made a salad made from mixed leaves, goats cheese, olives, tomatoes, a green pepper and pearl barley.
I also ate two Clementine oranges and a plum…a great fruit combination.
Dinner tonight was a bit of an invention test.
Smoked Tofu and Vegetable Omelet Pizza
- 1 egg and 2 egg whites
- 1 tbsp of soya flour
- broccoli florets
- French beans
- smoked tofu
- light Laughing Cow Cheese or cheddar cheese
- sesame seeds
To make the pizza base mix the egg, egg whites and flour together and cook in a pan to make an omelet. When the eggs are half cooked add the tofu and vegetables that are precooked and add the cheese. To make this like a proper cheesy pizza you could use cheddar cheese or any other melting cheese of your choice. Transfer on to a serving plate and sprinkle with sesame seeds.
For dessert I had a simple yoghurt bowl topped with kiwi slices and granola:

The weekend is finally upon us again. I am quite busy tomorrow, but I intend to have a very lazy Sunday. Although I intend to stock up on some whole grains and pulses and do some batch cooking to fill the freezer. So maybe it will not be so lazy after all.
