Larabar lovin’ and a MuleBar Giveaway!

It’s amazing how my university campus can look so different and still beautiful through the seasons…

The first two pictures were taken in late summer and early autumn.  The last picture was taken this morning on my walk through campus.I was well prepared for the snow and ice this morning in my comfy and reliable UGG boots…

I got them for Christmas last year and we have been inseparable in cold weather ever since.All this cold weather has really increased my appetite and on some days I’ve had to eat an early morning snack as well as an afternoon snack, which is usual for me.  This is exactly what happened yesterday on my very first snow day this winter.  For breakfast I decided to make a delicious bowl of Cherry Choco Oats by using chocolate soya milk, water, frozen cherries, a mashed banana and 1/2 a cup of oats.

This was so good!  I’ve been craving oats all the time recently.  They make the perfect breakfast in this cold weather.My mid-morning snack consisted of 2% TOTAL Greek yoghurt topped with the pumpkin butter and a little granola that I received in my package from America on Monday.

Seriously,  I love my nut butters I really do, but this pumpkin butter really takes the biscuit.  It’s fab!  I think once I have finished this jar I am going to try and make some of my own al la Angela.

For lunch I enjoyed a huge vegetable and basil tofu salad.  Initially I packed this to take to uni with me buy as I decided to stay at home because of the snow it meant that I could heat the salad up and stir in some apple chutney!  It sounds weird, but it was very tasty honest!  I also had some fruit too.

My afternoon snack was supposed to be half of a peanut butter and chocolate chip Larabar.  However,  after eating the first half I just had to rush back for the second half.  These are too good to be true.  I want to order them in by the lorry load…is that possible???

My boyfriend was also at home having a snow day and for some peculiar reason he was in a cooking mood.  So off he headed into the kitchen and whipped up three dishes to keep us going for the next few days.  It’s kind of weird when guys decide to cook. They go off into military mode as if they are planning for a nuclear war…or is that just Alfie?

We had one of his dishes for dinner.  He had made a batch chicken pepper pot soup.  I kinda changed it up a little and took out the chicken and added mixed veggies and served it with some garlic root vegetable mash and steamed savoy cabbage. 

It was really tasty and it’s one of Alfie’s favourite dishes to make.  His mum used to make it for him all the time at home so it’s something that he feels confident in cooking.  The garlic root vegetable mash was made from celeriac, parsnips and swede blitzed up in a food processor with a clove of garlic and soya milk…yummy!

After dinner we set off to go and watch the new Harry Potter movie.  I really enjoyed it, but I think for someone who hasn’t read the books it would be difficult for them to follow. Have you watched the Harry Potter movie yet? What did you think?

  1. I love adding chutney to my tofu salads, I’ve been doing that for ages but now my friends home made green tomato chutney has run out 😦 Great giveaway, I would love to be entered! Can I give you two favourite experiences? First was when I was able to fit into a size that was 4 sizes smaller than I was at my biggest, I’d never dreamed I’d be that size and since I love fashion so much it was just amazing. Second was finishing the great north run! 🙂

  2. My favorite healthy adventure was when I hiked the Swiss Alps this past fall. I pushed myself like I never knew I could and I even climbed a rock face with no harness or anything! It was truly such an amazing experience because I did so many things I thought my body could never handle (hiking uphill 10 hours a day!). I also started to appreciate nature more and the outdoors and really got to have some me time away from school and work and stress! IT was wonderful 🙂

    My favourite healthy experience (so far!) has actually been the trigger that started my healthiest year so far – the 30 Day Shred. I don’t think I’m exaggerating when I say, doing that this Spring has changed my life and I am now fitter, stronger and healthier than I ever have been, and have set myself up on this path for the rest of my life 🙂

  4. Love ya eats and love mule bars! Hmmmm I think my favorite adventure is still happening I left my job to become a personal trainer, qualified and also qualified as a nutritionist, got a job in my dream gym then moved to the city I wanted to live and now the adventure is just beginning : )

    My boyfriend hardly ever cooks (mostly because I love doing it so much!) but when he does, he’s exactly the same in the kitchen! Must be a man thing 😉

    Brilliant giveaway! My favourite experience on my healthy living journey so far would have to be discovering how GOOD it feels to eat healthy and exercise regularly. My journey started off purely as a weightloss thing, but it’s turned into something SO much more than that and the number on the scale is actually irrelevant to me now 🙂

  7. My favourite experience on my healthy living journey has been all the foods I’ve tried that I never would have before. I mean, a smoothie with SPINACH in it?!?!
    Second would be running my first ever race, and raising £300 for Cancer Research UK in the process 🙂

    If i had entered this a year ago i would have said weight loss and getting to my goal, however now i just really believe ‘you are what you eat’ (except if you are Gillian Mckeith, not good advertising for that moto!!) and eating healthily makes me feel on top of the world and ready to embrace life full on, who new a bit of greenery & some oats could make you feel so dang good, bargino!! x

  10. I just realised I hadn’t entered this 😮 silly me! Thanks for the reminder on your other post! My favourite experience has been going from barely being able to run a mile to running 13.1 less than a year after I first tried that mile. Even though I didn’t make my time goals that felt good!

    My favourite experience is probably discovering “blog-land”! I love reading other people’s blogs and getting new ideas for food…my current fave being pumpkin porridge!! It has made me so much more adventurous with my food and I really enjoy everything I eat now, as well as thinking more carefully about what I’m putting in my mouth…love it!
