It’s amazing how my university campus can look so different and still beautiful through the seasons…
The first two pictures were taken in late summer and early autumn. The last picture was taken this morning on my walk through campus.I was well prepared for the snow and ice this morning in my comfy and reliable UGG boots…
I got them for Christmas last year and we have been inseparable in cold weather ever since.All this cold weather has really increased my appetite and on some days I’ve had to eat an early morning snack as well as an afternoon snack, which is usual for me. This is exactly what happened yesterday on my very first snow day this winter. For breakfast I decided to make a delicious bowl of Cherry Choco Oats by using chocolate soya milk, water, frozen cherries, a mashed banana and 1/2 a cup of oats.
This was so good! I’ve been craving oats all the time recently. They make the perfect breakfast in this cold weather.My mid-morning snack consisted of 2% TOTAL Greek yoghurt topped with the pumpkin butter and a little granola that I received in my package from America on Monday.
Seriously, I love my nut butters I really do, but this pumpkin butter really takes the biscuit. It’s fab! I think once I have finished this jar I am going to try and make some of my own al la Angela.
For lunch I enjoyed a huge vegetable and basil tofu salad. Initially I packed this to take to uni with me buy as I decided to stay at home because of the snow it meant that I could heat the salad up and stir in some apple chutney! It sounds weird, but it was very tasty honest! I also had some fruit too.
My afternoon snack was supposed to be half of a peanut butter and chocolate chip Larabar. However, after eating the first half I just had to rush back for the second half. These are too good to be true. I want to order them in by the lorry load…is that possible???
My boyfriend was also at home having a snow day and for some peculiar reason he was in a cooking mood. So off he headed into the kitchen and whipped up three dishes to keep us going for the next few days. It’s kind of weird when guys decide to cook. They go off into military mode as if they are planning for a nuclear war…or is that just Alfie?
We had one of his dishes for dinner. He had made a batch chicken pepper pot soup. I kinda changed it up a little and took out the chicken and added mixed veggies and served it with some garlic root vegetable mash and steamed savoy cabbage.
It was really tasty and it’s one of Alfie’s favourite dishes to make. His mum used to make it for him all the time at home so it’s something that he feels confident in cooking. The garlic root vegetable mash was made from celeriac, parsnips and swede blitzed up in a food processor with a clove of garlic and soya milk…yummy!
After dinner we set off to go and watch the new Harry Potter movie. I really enjoyed it, but I think for someone who hasn’t read the books it would be difficult for them to follow. Have you watched the Harry Potter movie yet? What did you think?
