Friday is finally here! I can here you all cheering for the weekend. I hope you have all had a fantastic week. Now it’s time to rest and have some FUN! 😛 But before you all set off on your weekend shenanigans I thought I would have a little recap on some of my eats first.
On Wednesday before heading to the gym I made a delicious Sunshine Green Smoothie. It was so miserable and cloudy outside so I needed something to cheer me up. I can’t wait for some summer sun!
I’m loving the lime green colour of this smoothie and it was really delicious. I mixed 250 ml of vanilla soya milk, handfuls of spinach, 1 orange, 1/2 mango, 1 banana, 1 tsp of maca powder, 1 tsp of xanthan gum, 1 tsp of soya protein, 1 tbsp of acai berry juice and 1 tsp of milk thistle. I topped it with some half a bag of Bear Cherry Berry Fruit Nibbles and some Dorset Tasty Fruit and Fibre Cereal.
A great start to the day. 😛
My workout was a major cardio session lasting for 1 hour and 30 minutes. This sweat fest consisted of 20 minutes on the step machine, 20 minutes on the bike, 20 minutes on the *new* machine (pictured below), 15 minutes on the cross trainer and 15 minutes on the treadmill.
I refueled with a banana which tided me over till lunch.
Lunch was left over Pearl Barley and Green Lentil Pilaf to which I added a boiled egg and extra lots of spinach…loading up on that iron!
Spinach is amazingly good for you and has a great nutritional profile. It’s packed full of anti-oxidants, iron and calcium. I always make sure that I have some stashed in my fridge to eat raw in salads and smoothies, it’s great steamed too.
I also had a Yeo Valley blueberry yoghurt pot. Mid afternoon I snacked on some sliced kiwi, an orange, lychees and brazil nuts.
For dinner I whipped up an Aubergine and Kale Coconut Curry served with some steamed savoy cabbage and some string beans:
This was really delicious and seriously healthy. I do love eating a plate of veggies and a curry is a great way to add to your 5 a day. Counting the savoy cabbage and the string beans, there is actually 5 different vegetables in this dish alone!
Aubergine and Kale Coconut Curry
6 baby aubergines halved
3 cups of shredded kale
1 red onion
1 cup of precooked green lentils
1 tsp of dried chilli flakes
2 cloves of grated garlic
1 inch of fresh grated ginger
1 tsp of hot madras curry powder
1/2 tsp of turmeric
1/2 tsp of cumin
1 tsp of ground coriander
2 tbsp of tomato puree
1/3 cup of toasted desiccated coconut
1 1/2 tbsp of coconut oil
300 ml of Kara coconut milk
First fry off baby aubergines until golden and remove from the pan. I the same pan cook the red onion until softened and then add the garlic and ginger and cook for a few minutes until aromatic. Stir in the cumin, chilli flakes, ground coriander, curry powder and tomato puree. The mixture will become dry and aromatic. Pour in the Kara coconut milk and return the aubergines back to the pan. Simmer for 10 minutes, until the milk has reduced slightly and add the kale and the green lentils. Allow the curry to reduce again for a further 10 minutes on a low heat. Add the toasted desiccated coconut and serve.
For dessert I whipped up a speedy apple crumble, that required no cooking only the ping of a microwave…yes really!
I baked the apple and some Yeo Valley Orchard Fruit Compote in the microwave until it was bubbling and the apple was soft and then sprinkled it with some granola. This made for the perfect quick dessert. The fruit compote is amazing too and is all made from organic ingredients.
Yesterday I kicked started the day with some Vanilla Protein Oats.
This lovely bowl contained 1/2 cup of oats, 1/2 cup of water, 1 cup of vanilla soya milk, 1 tsp of pea protein, 1 tsp of milk thistle, 1 tsp of maca powder, 1 tsp of ground flax and a chopped pear. I topped it with raw chocolate covered golgi berries and pistachio nuts.
Total scruminess! (is that even a word?)
I love how the raw chocolate covered golgi berries melt into the porridge!
Mid morning I had a mug of miso soup that I actually forgot I had in the cupboard-surely an indication that I have too much health food goodies in my cupboards.
For lunch I made a mammoth salad topped with some yummy sweet chilli hummus.
This salad monster included random bits and pieces that I found in the fridge and threw together. I mixed batavia lettuce, steamed broccoli florets, a grated carrot, olives, sun dried tomatoes and artichoke hearts.
Sometimes the best things in life are just thrown together!
I also had a lovely bowl of cherries afterwards…
Who could resist these beauties…yum!
Before my toning work out with extra ab work I snacked on a slice of quinoa and amaranth rye bread topped with peanut butter and a banana. One of my faves!
For dinner I kept it simple with a huge bowl of fruit, including a sliced mango, apples, plums a kiwi with vanilla soya milk and topped with some Dorset Tasty Fruit and Fibre Cereal.
I later went back for two more apples and some lovely RAWR Zest chocolate…
This chocolate is simply divine. Have you tried it before?
I’ve spent the last few days working from home writing an application for travel funding for a conference in Florence. Of course I really want to go to the conference for the obvious academic and professional reasons, but to visit Italy would be amazing. I haven’t had the chance to see that part of the world yet and it would be amazing to kill two birds with one stone. Fingers Crossed! 😀
I’m so happy for the weekend! My boyfriend has the weekend off work and although I’m working tomorrow at least we can spend some quality time together on Sunday.
