Pancake Day!

Happy Pancake Day everyone and it’s International Women’s Day too!  So lots to celebrate…yay! 😀

I couldn’t have pancakes for breakfast this morning due to my early spinning class, but I did have a fab green smoothie which was a delicious consolation prize.

I mixed beet root, a banana, spinach, almond milk, water, xanthan gum, cocoa powder, sunflower seed butter, whey protein powder and ground flax. 

This was so good as always.  I topped it wit coconut, cranberries and brazil nuts.  At the gym I had a mental full hour of spinning which included 4 mountain climbs (ouch!) and 15 minutes on the adaptive motor thingy and 15 minutes of interval training on the cross trainer followed by some ab work.

Lunch was a tasty salad that I enjoyed at home in the sunshine. 

It consisted of mixed leaves, olives, carrots, red cabbage, millet and was topped with a huge portion of my Sweet Chilli Hummus. 

This recipe is so darn simple!

Ingredients

  • 400g of tinned chickpeas
  • 2 tbsp of tahini
  • a squeeze of lemon juice
  • water
  • 2 tbsp of sweet chilli sauce (add more if you like your hummus a little hotter and sweeter!)
  • 1 tbsp of chopped coriander
  • seasonings

You know what to do- just blitz, blitz, blitz in a food processor, season to taste and add just enough water to get a smooth consistency.

OK! So this recipe is hardly a revolution in the hummus stakes, but boy it’s yummy!

After lunch it was time to get back to the books.  I’m sure the sun was mocking me after I went inside, it looked so much brighter and warmer once I was indoors. 

Mid-afternoon I ate some low fat fromage frais mixed with the almond mush leftover from my almond milk and some golgi berries and dates.

Now I know that I can eat pancakes any day of the week, but I never do because I don’t have the time to make them in the morning.  I’ve had pancakes only once this year! 😦  So since today is pancake day I knew exactly what I was making for dinner and dessert.

Pancakes, how I love thee!

Total yumfest even if I do say so myself. 😀

My peanut butter supply is low and I have been looking at other alternatives to try.  I’m all for trying new ingredients and in my search I discovered this:

PB2 is a powdered peanut butter that has 85% less calories than regular peanut butter.  It always comes in a chocolate flavour too.  As with all products like this it’s only available in America, but can be ordered online from the manufacturers website.  It’s hard to believe that a powder can taste just as good as regular PB, but I’ve read some amazing reviews about this stuff and would love to buy it.  Before I do I wanted to hear your thoughts about it.  Have you tried PB2 before?  What did you think?  Does it taste like regular PB?

    i ordered pb2 and its waiting at my fams house in CA!! ahh its so close yet so far!! ive heard its good and similar to pb! tell me if you found a place to order PB2 to the UK!!!!

    I’ve never tried powdered peanut butter – I can’t imagine what it tastes like (regular peanut butter I guess :))

  5. Woop for the big up to International Woman’s Day!! When I was in Italy the supermarket gave all the women flowers, too bad we miss out here in the UK ;).

    Your smoothie looks awesome, I think I need to jump on the smoothie bandwagon. Also, amazing looking pancakes. I tried to make some at the weekend, and they were nowhere near as good as yours look. Enjoy the rest of your week! x

  7. Jessica (almost over now) sent me some! Its lovely! YOu can mix it with water to make normal pb, (quite sweet tasting) or mix the powder in to puddings and things (which is lovely)
    The chocolate stuff looks soooooo good too 🙂

    I’ll be interested to read what you make of the PB2. I’ve read quite a bit about peanut flour, which I guess is the same thing? I have to say though, I think I’d miss the fat..

    • I know I think the postage is more than the actual product. This is the only site that I’ve found that delivers to the UK. Even the bell plantation site who make PB2 do not deliver to the UK. I chose the longest delivery time to keep the cost down, but it’s on its way now and I cannot wait to try it!!! 😀

  12. Yey, finally I can see your post! I actually ordered the PB2 from the same place last week. I also hope its up to how much I spent on it! Like Alison I didn’t have pancakes yesterday, especially when I can have them any day of the year! Will be trying beets in my smoothie tomorrow morning me thinks, you and Tam have me inspired x

  13. I’ve tried PB2 and while it’s a lovely product in its own right, it does not taste remotely like ‘real’ peanut butter, nor does it mimic the texture. It’s much lighter and does have a peanut flavour, but the lack of healthy fats means it’s not as ‘stick to your ribs’ as PB. The chocolate one is also pretty sweet, even by my standards!

    No pancakes for me: I’d rather have eaten your amazing breakfast! I must be a blogging oddity in that I don’t really like pancakes…
