Eating for Summer!

Happy Monday!

I had the most perfect wake up all this morning.  I woke up to the sun streaming through my curtains this morning at 6am no less.   And before you think it NO, I don’t have holes in my curtains the sunlight was shining through the little gaps left at the sides…okay! 😀

Once up I started the day with an early morning workout consisting of 2 repetitions of my regular toning workout.  After this  I ran to the kitchen to make breakfast as I was starving this morning.  I settled on Dorset Cereals Low Fat Flakes topped with blackberries, raspberries and a chopped pear and homemade brazil nut milk.

The brazil nut milk seems a little more watery than the almond milk, but still good all the same.

For lunch I had an amazing fresh and tasty salad, using lots of greens, and a Quick and Easy Quinoa Pilaf.

To  make the pilaf you will need:

  • 2 cups of cooked quinoa
  • 1 tomato diced
  • 1/2 a red pepper diced
  • 1 stick of celery diced
  • 1 carrot diced
  • mixed olives (optional)
  • 2 tsp of dried mixed herbs

Then it’s just the case of throwing everything into a bowl when the quinoa is still warm and getting-a-mixing! It’s best to do this whilst the quinoa is warm as this is when it will soak you all of the yummy delicious-ness from the dressing and the vegetables.

I loved this!  It was so light and refreshing- exactly what I would eat in the summer.  This recipe should make 2 servings. You can literally throw in what ever vegetables your heart desires and it would still work.  I do love an easy and quick dish for meals in the summer,  so I can spend more time I the sun.

Afternoon snackage was a homemade  trail mix that I put together.  It included many of my favourite things: almonds, raw chocolate covered goji berries (Nicky I spelt it correctly this time! :D), omega mixed seeds and dried cranberries.

This was great and full of healthy fats, nutrients and treats!  I also ate a banana too for some potassium loving!

Dinner was a BIG mistake:

I wanted something quick and easy so I decided on a stir fry made form aubergine, sugar snap peas, mushrooms, broccoli florets, carrots and baby corn.  The sauce was made from sweet white miso, soy sauce and…peanut butter!

HOLY MOLY (another new phrase)!  This was amaaaaaz-ing! I’ve never even thought to put peanut butter on my veggies before. The peanut just melts and goes all lushiously creamy.  If you haven’t tried it yet then seriously get to it!

Dinner was a mistake because at this rate I’m to end up having peanut butter for breakfast, lunch and dinner…would that be such a bad thing? 🙂

What kind of foods do you eat in the Summer?  I’m big on fresh and light salads, fish, fruit bowls and lots of yoghurt in the hot weather.  I can’t wait for all of the new fresh produce when the season changes.  Got to love British strawberries.

Have you tried peanut butter on veggies before?   It’s seriously good!

  1. Your meals are always so pretty and colorful!!! I love it! I’m big on peanut butter salad dressing but I don’t think I’ve ever tried it in a stir fry. Sounds so good! Peanut butter is AMAZING!

    I love finger food in summer, fab homemade burgers, jerk chicken, bbq’s etc. And all the amazing fresh fruit!

    Hi! Quick question, do you do anything with the oats before putting them with the yogurt/smoothies?! Should I soak them or anything first? Sorry,! 🙂 xx

    • Hi Katy! There are so many ways to use oats. When I do put oats in my smoothies I put them in raw as the blender blitzes them up to make the smoothie more creamy. I have added warm oats to a lovely blueberry smoothie though and that was fab! I haven’t had that for ages, one for this week I think.

      You can add yoghurt to overnight oats, stirred in cooked oats and as a topping for cooked oats. The options are endless! x

  4. Can’t believe you hadn’t tried pb sauce on veggies! I love making a pb sauce with soy, lime juice and ginger for stir fries its heavenly – try it with some smoked tofu, broccoli and brown rice its to die for! I can’t wait to try making a version with the PB2 as well 🙂

  5. omg i eat like 5 tbsp of pb a day.. dont even think twice about the amount you eat!! i KNOW THE WEATHER WAS SO NICE TODAY!!i went for such a beautiful run outside- LOVED It and i actually got a bit tan.. can i get a BOO YEAH!?

  6. Wow, all of your meals look SO GOOD! I love PB with veggies because it reminds me of Thai food which I really love! It’s also really really good with tofu 🙂
    I am so so excited for summer. It means fruit galore! All those fresh berries are my favourite and I love picking them myself. I love sorbets too – especially mango. I normally keep the same kind of meals though because I love veggie curries/chillis/stews way more than salads.

  7. I often put peanut butter in my stir-fries – it’s so yummy! I also made a sweet potato and tomato stew with peanut butter in. Is there anything that can’t be done with peanut butter?

  8. I wish I could eat ‘lighter’ foods at any time of year to be honest. Sadly even if I do have a salad it’s usually covered in a huge amount of hummus and accompanied by tonnes of other things. Fresh British strawberries are a great part of summer, as are mangoes. Obviously the latter aren’t British though 😉 But I crave mango in the summer and M&S do a lovely tree-ripened one that’s only available June-August it seems.

    I adore PB on veggies, either regular peanut sauce or peanut flour/PB2. Seems a classic combination to me and so glad you’ve discovered it 🙂

    Like a lot of people I love huge salads. I still eat them in the winter in fact, but in the Spring they seem to taste so much nicer. Maybe it’s just the sunshine!

  10. Peanut butter stir fry sauce is AMAZING! Mm! Also loving the look of that quinoa salad and the pear/berry combo you had for breakfast!
    As for summer foods… I’m all about the berries, salads etc. oh and yogurt! I was considering going vegan this summer, but I just remembered the joy of eating greek yogurt with berries in the sun… no chance now 😉

  12. I think it’s a fact that PB goes with anything 😀 haha! Especially stir frys. During the summer, I load up on smoothies and veggies! for the most part.

  13. I did the same yesterday! With nutritional yeast which is the most amaaaazing combination… I had the same worry about frequency of eating it, but nah, how can something so good be bad?! 🙂
