Friday Feature: Homemade Mixed Muesli

Simple, easy and very very tasty!

I love me some muesli for an easy breakfast by itself and with rice milk and fruit,

As a topper for a quick yoghurt snack…

and muesli makes the peRfect base to be adorned with yoghurt and berries.

I’m always filling up my shopping basket with muesli I use it on everything, even my green smoothies…

…so I thought I would get on it and go and make my own mix full of the things I LOVE.

*Homemade Mixed Muesli*

Ingredients

  • 3 cups of jumbo oats
  • 1/2 cup of bran flakes
  • 1/2 cup of shredded raw coconut
  • 1/4 cup of goji berries
  • 1/4 cup of omega seeds
  • 1/4 cup of sesame seeds
  • 1/2 cup of mixed dried fruit and nuts
  • 2 tsp of lucuma powder (optional)
  • 2 tsp of maca powder (optional)

Toast the oats on a low heat in the oven until the edges turn slightly golden.  Once cooled mix the oats with all of the other ingredients- and it’s as simple as that!  You can easily get a few bowls full from this recipe.  To be honest you don’t even have to make a big batch of muesli. It’s so quick to make you could just mix up all of you favourite things on the day.  The lucuma powder and maca powder are my own personal additions as I like the malty and sweet taste they add, especially when milk is added.

What of your favourite eats and treats would you put in to your on mixed muesli?
