Friday Feature: Coconut Spiced Vegetable Soup

Hey everyone!  My bestest bud Friday has finally arrived.  I hope you have all had a great week.

Today was D-Day for me as I had to give my Symposium talk.  After I got passed the first 3 slides and remembered how to breath I pretty much sailed through it.  OK, some parts could have been better in my opinion, but I had some lovely responses from some people afterwards.  Overall, I’m just glad it’s all over.

Thinking about a relaxing Bank Holiday weekend has really got me through the early mornings and late nights this week.  I’m really going to make the most of this weekend.  I’ve been dreaming about far and distant places this week too whilst being cooped up in the library:

*Coconut Spiced Vegetable Soup*

Ingredients (makes 2/3 servings)

  • 2 spring onions sliced
  • 2 cloves of grated garlic
  • 1 inch of ginger grated
  • 1 courgette sliced
  • 2 carrots sliced
  • a handful French green beans
  • 1 small yellow/red pepper diced
  • a handful of chestnut mushrooms sliced
  • 1 can of light coconut milk
  • 600 ml of vegetable stock
  • 1 tsp of cumin
  • 2 tsp of hot madras powder
  • 2 star anise
  • 1 cardamom pod crushed
  • 1 tbsp of dried chilli powder
  • juice of one small lime
  • 1 1/2 tbsp of turmeric
  • 2 tbsps of soy sauce

First fry the garlic, ginger and spring onions in a little bit of coconut oil.  Once aromatic add the prepared carrots, mushrooms, courgettes and peppers and cook until tender.  If the pan becomes too dry add some vegetable stock to the pan, rather than more oil.  Stir in all of the spices and soy sauce until all of the vegetables are coated.  Pour in the vegetable stock and coconut milk and allow the soup to simmer for at least 10 minutes on a low heat. Add the French green beans and allow to simmer for a further 10 minutes before serving.

  2. This looks so yummy! I am a huge fan of Thai food – I’ve been there twice and it’s my favourite place in the world that I’ve visited so far. It is simply stunning, with AMAZING food, really friendly people, fantastic culture..it’s out of this world!
    At the moment I REALLY want to go to NYC for all the foodie stuff and shopping but also I want to go to Singapore..I basically want to travel the world actually..there’s so much to see and try!

    That coconut soup is certainly very tasty!
    I´d love to go to Norway and Sweden, not particulary because of their food but I love those countries.
    I would like to try sweet potatoes – they might seem pretty common to you, but where I live, people haven´t seen them even in a picture 🙂
