I sent off my email to my Foodie Blog Swap Partner today. I’m still so excited about this!! I cannot wait to see everyone’s swaps at the end..yay! I’m also excited about finding out Alfie past his finals- he’s officially a doctor!!!! 🙂 I’ve been grinning from ear to ear since his results came out this afternoon. There’s going to be a lot of celebrating this weekend!
Well, my food over the last few days has been what has been convenient and easy as I’ve had a few long days in the lab doing experiments. Although my meals still just as tasty of course. For breakfast yesterday I had two OIAJ. I’ve had these two empty peanut butter jars in the back of my cupboard for some time now, so I thought yesterday was the perfect time to dig them out. I filled them with the simplest mix of oats that I’ve had in a while…
1/2 cup of oats, 11/2 cup of water, 1 cup of oat milk, 1 chopped apple, chopped dates and cinnamon-and that was all! This was amazing and I loved how the peanut butter melted down the sides of the jar and into the oats.
After my yoga and abs and core workout this morning I had a delicious fruit smoothie made with passion fruit, Rachel’s Organic coconut yoghurt (LOVE!), a banana, oat milk, lucuma powder and hemp protein powder. I couldn’t help but get stuck into my box of PB Puffins topped with a topped apple also. The PB Puffins taste fabulous! I’m so glad I ordered them.
Another smoothie took centre stage for last nights dinner after getting home late from the lab and my usual Monday gym workout. This time a green smoothie, which included spinach, a banana, chocolate soya milk, raspberries, water, xanthan gum, hemp protein powder, coconut butter and maple syrup. Toppings included banana chips, goji berries and dried fruit and nuts…YUM! 🙂
Lunches on both days have been the same huge salad…
Left over stir fried veggies (aubergine, mushrooms, broccoli and cauliflower), lambs lettuce, rocket, basil tofu, cucumber and tomatoes. I do love a huge plate of veggies. If you has served this in front of me a few years ago I would have probably cried!!!
Dinner tonight was a lovely stir fry of mixed veggies in sauce made from soy sauce, oyster sauce, rice vinegar and 5-spice powder served with some buckwheat soba noodles dressed in sesame seed oil and black sesame seeds.
I had cravings for Cookies and Cream Ice Cream this afternoon so I made a healthy portion for dessert tonight this time with a swirl of peanut butter sauce. Cookies and Cream is the BOMB! I’m afraid that my tub isn’t going to last long at all and I’ve already got my greed lil’ eyes on some of the other flavours too. A few of you have been asking what goes into my version of this bowl of heaven.
1/2 a scoop of Spiru-tein Cookies and Cream whey protein
2 tsps of xanthan gum
ice cubes or crushed ice (amount depends on how big you want your portion)
100 ml of rice milk (or any other non-dairy alternative)
I add the rice milk to help my blender out a little, but it’s probably not necessary. Also if you have a sweet tooth you could also add a little sweetener like agave too.
I loved my first taste of Peanut butter Puffins. They really are amazing! The texture and definitely not the taste reminded me of a cereal that I loved when I was much younger…
I used to eat these things like they were going out of fashion! I used to stick to one cereal for months and used to alternate between Corn Pops, Pop Tarts, Cheerios and Crunch Nut Cornflakes.
Now I’m more in to my green smoothies…
I’m so glad that I’m far more adventurous with my breakfasts now. I don’t know how I would survive with a bowl of Corn Pops everyday! 😦
What were your favourite breakfast cereals whilst growing up? Would you still eat them now?
