Smoothies, Salads and Compote!

Hello lovely people!

I’ve reading your amazing responses to Friday’s debate-type post.  It seems many of you will always try natural remedies first for minor ailments before turning to prescription medication.  I’ve think it’s great that so many of us now have so much faith in nature not only to make us feel great by eating lots of fresh produce, but by also for it’s healing properties too.

Did you have a good weekend?!?  I’ve had a great weekend!  Ok so I was at work all of Saturday, but I did meet up with my friend afterwards for a dinner date.  This morning I headed out for my usual Sunday run: 10K in 1 hour and 3 minutes.  I took a more hillier route compared to my usual running route and I did fid it much more challenging, but my pace remained pretty much the same, so overall I’m quite happy. 🙂

This weekends eats have been super tasty, especially my breakfasts!  On both days I fed my green smoothie addiction:

Smoothie number one included spinach, a banana, 1 scoop of cookies and cream protein powder (holy yum!), ground flax, lucuma powder, oat milk, water and xanthan gum.  This was amazing!  I  really am a huge fan of Spiru-tein protein powders now and have already lined my next flavour up my next iHerb order next month.   I topped this green delight with banana chips, pumpkin seeds, and melty the bee’s knees peanut butter.

Smoothie smoothie number two included spinach, a banana, a punnet of raspberries, oat milk, coconut water and maple syrup.  I also had some toasted quinoa and amaranth rye bread, half topped with dark chocolate dreams and the other with peanut butter.

Lunch on both days have been gigantic salads.  These included a mix of spinach, mixed salad leaves, tomatoes, cucumber, carrots, sugar snap peas, peppers, olives and topped with a very tasty tahini dressing.  For the dressing I mixed tahini, water, black pepper, red wine vinegar and dried mixed herbs.

Obviously last night I ate out, so no pic I’m afraid.  I did have an amazing Bouillabaisse that was jammed packed with John Dory, sea bass, red mullet and mussels.  Although I do have a pic of Friday’s dinner…

Yup!  A huge bowl of cereal. I had a craving for Peanut Butter Puffins and much more cereal based yuminess.  I made a mix of al of my favourite cereals: PB Puffins, Kashi cereal, my Homemade Mixed Muesli, Lizzi’s granola, bran flakes and puffed rice. I topped this with a peanut flour sauce, dark chocolate chips and a chopped apple.  🙂

Tonight’s dinner wasn’t as extravagant, but still very delicious!

I made a quick mixed vegetable and red lentil stew served with steamed broccoli and cauliflower. For a fast and easy meal this was perfect! 🙂

Dessert tonight was a bowl of Rachel’s organic yoghurt topped with some vanilla pumpkin seeds and some compote that I made this morning…

This compote is amazing!  I loved it and the fact that it took less than 15 minutes to make made it taste even better.

*Apple and Blackberry Compote*


  • 5 cooking apples
  • 2 cups of blackberries (I raided my freezer stash)
  • 250 mls of water
  • 3 tbsps of agave nectar or any other sweetener (add more if you like your compotes sweeter)
  • 1 tsps of cinnamon

Peel and chop the apple and place in a saucepan with the fresh or frozen blackberries.  Add the water, cinnamon and agave nectar to the to the saucepan and cook on a medium heat.  Cook the fruit for at least 10 minutes, or until the fruit has softened and the compote is bubbling in the pan.

This made quite a healthy portion so I’ve stashed some in the freezer for a rainy day.  I love compotes as there is the flavour combinations is literally endless.  What would you put in to your own compote?

    Oh!!!! So many amazing pictures! You are the master of cooking! 🙂 I live compots, we are making them all the time. I especially like pear compote with cinnamon and cloves. And pumpkin compote with pineapple chunks. Mmmhhh…tasty 🙂

    I love cherry compote or maybe a tropical one of mango and pineapple would be nice for the summer 🙂
    Me and my partner both sent our packages a week ago so we’re just waiting hehe! You know I was excited hahaa
    Yesterday I went to a food festival in town and went round sampling 😛 And did a bit of shopping…and then today I just mooched around doing housework and lots of baking that is all in my freezer for the week yum!

    I love making compotes- I love to use cooking apples as they go all mushy.

    This week-end I went to the same food festival as Nicky (but on a different day: I went today!) and on Saturday had a great meet-up with Laura (Keeping Healthy). I think this has to be a record for me in terms of socialising so much in one week-end (sad I know! But a big victory for someone that usually freaks out after an hour out of the house unless it involves the gym).

    Just a shame the weather’s been such a pain. Rain on both days in the North-East.

  15. I’ve been loving a TJ’s dressing lately that they loaded up with tahini. It is soooo good with butterhead lettuce.
