Gluten Free Peanut Butter Cup Cookies

Question: Anyone addicted to peanut butter around here?

Answer: I am, boarder line obsessive.

I like it on my oats…

…OIAJ anyone?…

…in and swirled on top of my smoothies as a sauce…

…on top of my cereal to make them more satisfying…

…it’s also great smeared on rice cakes as a snack…

…I also like it in confectionary form too!

The one thing that I have never done with peanut butter is bake with it…until now.

*Gluten Free Peanut Butter Cup Cookies*

The funny thing is I hadn’t set out to make these gluten free. I was totally out of specialist flour to bake with and just didn’t want to make that trip to the shop. So, out of my shear laziness gluten free cookies were born. πŸ™‚

Ingredients (gluten free, makes 12 cookies)

  • 1 cup of peanut butter (I used organic crunchy PB)
  • 1/3 cup of golden caster sugar
  • 1/2 tsp of vanilla extract
  • 1 egg
  • 1/4 cup of dark chocolate chips

In a mixing bowl cream the sugar and the peanut butter together until well combined by hand, using a hand held mixer or a food processor. Add the egg and vanilla extract and mix well. Stir in the chocolate chips so that they become evenly distributed throughout the cookie dough.

On a ready prepared baking tray form 1 tbsp size cookie dough balls placing them about 1 inch apart on the baking sheet. Flatten them slightly to form disc shapes.

Bake at gas mark 4/350 degrees for approximately 10 minutes. Baking time will vary depending on you oven. I found that 10 minutes was just enough and the cookies were golden around the edges and soft in the middle. Once cooked set them aside to cool.

Next: stand guard beside the cookie jar with your meanest face to ward off any incoming cookie monsters.

  5. Hahaha your nut butter collection looks like mine!!! I have sooo many kinds of nut butter. I’d say I’ve got at least 4 kinds of PB & co pb, plus 3 kids of homemade butter, and 2 kinds of organic/raw types at any moment. haha

  13. GF + pb + chocolate = win, in my book… perfect combination! I actually prefer almond and coconut butter and straight out of the jar is always the way πŸ™‚
