WIAW…Yellow and Green

Thank you all for you amazing comments on my last post, which I thought was an important topic and pretty much sums where I am right now.  They really mean a lot and it’s nice to know that there is support network out there- doncha just love blogging community?!?!

Peas and Crayons

Another reason to love blog land of course is the fab weekly food party hosted by Jenn!  As always I’m going to rewind to Mondays eats and offerings just because it was a good day of food.

I started the day with a very early gym work out.  Although it was a struggle to get out of bed as I thought I would get in some reading of the second Hunger Games book before heading out…such a good read!   At the gym I got in a great workout which included 30 minutes high intensity intervals on the cross trainer, bike and the step machine, strength workout 1 and a 5 minute cool down on the bike.

When I got home I made a post workout smoothie made from a banana, a pear, blueberries, almond butter and rice milk…yum!


For lunch  I dug into the freezer and defrosted some Food Doctor seeded pitta pockets that I picked up last week.  I don’t usually have sandwich type things for lunch so these were a nice change.


I toasted them and filled them with mixed salad leaves, chopped tomatoes, cucumber, cream cheese and tomato and chilli chutney.  They were quite tricky to eat as I had over filled them, but tasted lovely.

Later in the afternoon I snacked on a an Empire apple, dried mango, dried mixed berries and prunes.  Now Pink Lady’s are my ultimate apple of choice, but these Empire apples are actually pretty tasty and a little bit cheaper too.


Dinner was a huge veggie plate of yellow and green…


I made my revived my Curried Cauliflower recipe without the red lentils and paired it with some roasted broccoli and asparagus.  It has been so long since I have had asparagus I just love the stuff!


And of course there is always room for dessert.  I headed for the freezer again for my Gluten Free Peanut Butter Cup Cookies with a glass of chocolate Kara coconut milk curled up in bed reading my book.


This was just bliss!

Well I better rush off to work, but I cannot wait to get home so I can get back straight to my book.  I’m so glad that I am making time for myself to read again.  I’m hoping to finish all of The Hunger Games books before the movie comes out later this month- can’t wait to see it!

  8. For Book Club I need to get started on Middlesex, but I’m trying to finish The London Train first! I have been having SO much trouble focusing on a book lately…

    I like Empire apples…sometimes. They can be hit or miss I think. πŸ™‚

  9. I loved the Hunger Games books, I’m currently reading ‘The Happiness Project’ now that I finally finished Eat Pray Love! That smoothie sounds good, I know how tasty my cherry pear and almond smoothie is so must add rice milk next time for added creaminess!

  12. That smoothie looks so appealing – isn’t it nice to have some natural light again?
    I’m re-reading Intuitive Eating again for a little reminder to myself. I just finished “Pure” by Andrew Miller, which I didn’t like at all. I loved The Hunger Games – I should read them again soon.

  13. All your eats look so delicious and fresh! I’m especially a fan of that refreshing smoothie and colorful veggie plate. I would eat fruits + veggies all day long if I could… with maybe a few cookies interspersed. It’s all about balance, right :)?

  15. Guess who is a new Celery and Cupcakes reader?! This girl (thanks, WIAW!). I love the look of that lunch … I’m a pita fan, but don’t eat them enough!

    I hate to be one of those people – but Hunger Games will change your life πŸ™‚ I didn’t even want to read them, but I read the first one so my friend would have a buddy to see the film with and I wanted to know the story going in. Now I’m so glad I started … read them all in like 2 weeks! Currently reading Kelly Cutrone’s biography – lovin’ it!

  17. That snack looks lovely πŸ™‚ I am reading The little friend by Donna Tart- it is a bit of a slog though and not my usual page turner. Kind of interesting but the story just ambles along and I don’t really find myself wanting to know what happens next. Ah well.
