WIAW…Yellow and Green

Thank you all for you amazing comments on my last post, which I thought was an important topic and pretty much sums where I am right now.  They really mean a lot and it’s nice to know that there is support network out there- doncha just love blogging community?!?!

Peas and Crayons

Another reason to love blog land of course is the fab weekly food party hosted by Jenn!  As always I’m going to rewind to Mondays eats and offerings just because it was a good day of food.

I started the day with a very early gym work out.  Although it was a struggle to get out of bed as I thought I would get in some reading of the second Hunger Games book before heading out…such a good read!   At the gym I got in a great workout which included 30 minutes high intensity intervals on the cross trainer, bike and the step machine, strength workout 1 and a 5 minute cool down on the bike.

When I got home I made a post workout smoothie made from a banana, a pear, blueberries, almond butter and rice milk…yum!

For lunch  I dug into the freezer and defrosted some Food Doctor seeded pitta pockets that I picked up last week.  I don’t usually have sandwich type things for lunch so these were a nice change.

I toasted them and filled them with mixed salad leaves, chopped tomatoes, cucumber, cream cheese and tomato and chilli chutney.  They were quite tricky to eat as I had over filled them, but tasted lovely.

Later in the afternoon I snacked on a an Empire apple, dried mango, dried mixed berries and prunes.  Now Pink Lady’s are my ultimate apple of choice, but these Empire apples are actually pretty tasty and a little bit cheaper too.

Dinner was a huge veggie plate of yellow and green…

I made my revived my Curried Cauliflower recipe without the red lentils and paired it with some roasted broccoli and asparagus.  It has been so long since I have had asparagus I just love the stuff!

And of course there is always room for dessert.  I headed for the freezer again for my Gluten Free Peanut Butter Cup Cookies with a glass of chocolate Kara coconut milk curled up in bed reading my book.

This was just bliss!

Well I better rush off to work, but I cannot wait to get home so I can get back straight to my book.  I’m so glad that I am making time for myself to read again.  I’m hoping to finish all of The Hunger Games books before the movie comes out later this month- can’t wait to see it!
