Working Girl

Hello everyone!  I hope you have all had a great weekend. 🙂

My weekend has been pretty standard, but I’ve really enjoyed it even though I haven’t been up to anything exciting.  It’s just been really relaxing and involved lots of baking in the kitchen.  I cannot wait to share some of the tasty recipes that I have been cooking up.

Yesterday I had to go back to work…BOOOOOOO!  Actually it wasn’t so bad as after 2 weeks off I felt pretty chilled out and refreshed so ready to tackle the onslaught of the early Christmas shoppers.  I even got to leave an hour early to take my complementary Christmas shopping time too. Happy Days! 😛

As I work on a fashion floor we have to look relatively “on trend” or “with it” as my lovely Mum would say.  Considering that the uniform is strictly black it is quite a difficult feat, but we are allowed to accesorise with colour.  With that in mind I just had to bust out my bright red shoe boots.  The remind me a little bit like shoes that an elf would wear as they don’t quite reach up to the ankle.

A long day in retail means a good hearty breakfast is required to set me up for the day.  I decided to make a simple but very large and delicious bowl of banana and cinnamon oats with water topped with crunchy PB and strawberry jam.


For lunch I made one of my favourite salad of all time after bagging a great deal on figs at the market.  I got 8 figs for a £1!!! I love a bargain and I certainly love figs in my salads.


I just love adding nuts and dried fruit to my salad for sweetness, but my favourite is sweet with a  salty vibe.  So this sweet and salty loveliness really hit the spot and helped me through the afternoon at work.  


To see me through the afternoon I snacked on a huge pink lady apple (yum!) and a Nakd Cocoa Delight bar.


Since I got home earlier than usual it meant that I got to go all experimental in the kitchen.  I’ve been wanting make some tofu meatballs for ages and thought it would be ideal to cook some up with the bargain pack of tofu that I picked up earlier this week.  They tasted great, but I will be sharing the recipe later this week so you will have to wait that little bit longer.


For dessert I made up a yummy snack plate of 2 pink lady apples dusted with cinnamon with Booja-Booja ginger stemmed truffles.  Oh my!  These truffles are so light and fluffy inside.  Booja-Booja are by far my favourite chocolate brand and I’m not even vegan!


Later in the evening I decided to get my snack face on and raided the gingerbread men and had some more dark chocolate.  This morning I did feel a little off balance and sickly so quickly made a huge green smoothie and did an awesome yoga session to feel all zen like and more like myself again.

I *Heart* September

WOW!  Where did this month go??!

To be fair September has been the best month for me as it’s had it’s ups and downs for one reason or another.  Although it can be hard sometimes I’m never been one to focus on the negatives and find it much more healthier to focus on the positives, which is one of the main reasons I like to do these “I *HEART*…” posts at the end of each month.  There is supposed to be a pot of gold at the end of every rainbow and rather than focusing on all of the bad stuff I’ve been found some nuggets of gold speckled throughout the month:


I started to reassess my grocery spending and decided to go back to basics with some Budget Busting Meals.

I’ve been in love with the recent Indian summer in the UK.  It’s now Autumn and I have a tan, you just cannot beat British weather.

My blog was also shortlisted for the Cosmo Blog Awards 2011

…Ahhhhhh!  This has to be the pinnacle of my September.  🙂 I still can’t believe it and words will never express how grateful I am to everyone that nominated.

I’ve also been making headway with my thesis and almost re-edited my first chapter, kept up with my regular workouts, sold lots of old clothes on eBay to make some extra cash and also maintained eating healthy but balanced food.

For October I hope to:

  • continue to make progress with my thesis
  • concentrate on strength training based on the NRoL workout
  • focus on reigning in my food budget
  • construct a professional CV targeted at a career in research science
  • listen to and be kind to my body (a post coming up on this soon!)

WIAW…The Apple Factor!

Well it’s that time of the week again people!  You all know what I’m talking about, eh?

Peas and Crayons

It’s time to go to the best party in blog land of course- lets do this! :)

For this weeks link up party I’m going to share with you yesterday’s eats as I think they were pretty tasty by my reckoning.  It all kicked off with an energising and mood boosting green smoothie. 

I was in thesis stress mode yesterday morning and this simple bowl of green deliciousness really helped.  It included kale, curly lettuce, 2 plums, New Zealand honey, strawberry hemp protein powder, xanthan gum and guar gum.  I topped it with a Guilt-Free Ginger Bread Cookie, dried cranberries, homemade almond butter and sunflower seeds…yum!

Throughout the morning I was snacking on a load of cherries, practically the bowl disappeared in seconds!

For lunch I made a enormous Budha Bowl that was inspired by gorgeous salad that I love in Marks and Spencer’s for a fraction of the cost. I made a wholewheat cous cous salad adding in steamed broccoli, cherry tomatoes, edamame beans, red peppers, cucumber and sunflower seeds on top of some romaine lettuce leaves.

Whilst the cous cous salad was still warm I mixed in my dressing that I made from sweet chilli sauce, rice vinegar, lemon juice and cumin which soaked right into every grain.  This really was the perfect lunch ate outside in the sunshine.  Don’t you just love British weather? The leaves are falling off the trees like it’s Autumn, yet we have cloudless skies and warm temperatures like it’s the height of summer.  The weathers unpredictability is all part of Britain’s charm I’m sure. 🙂

And because I made up such a huge batch I have plenty of leftovers too-BONUS! 😀

My afternoon pick-me-up was a braeburn apple and a much coveted banana bread Nakd bar, which was amazing by the way.  The braeburn apple on the other hand was rather blah!  I thought I would mix up my apple varieties a little and look for cheaper alternatives but still nothing comes close…sigh!

For me pink lady apples are the best all the way.  They just have it all: the sweetness factor and that all important crunchabilty factor, everything that I look for in an apple. I’m sure if Simon Cowell was scouring the country for the most perfect apple he would be totally bowled over by pink lady’s too.

In the afternoon I headed to the gym for a 10 minute interval warm up on the treadmill and my Body Pump class.  I don’t know what it was but yesterday’s session was awesome, totally loved it!  I’m feeling the effects of it today though: it DOMS central over here!  Next week we are doing the new release and I’m super excited.  My instructor has been teasing us with it for weeks.  In fact she has had it for a while but didn’t want to share it with us until all the students are back on campus.  I cannot wait!

Dinner last night was super speedy and didn’t require much cooking.  I dug a Squash Bean Burger from the freezer and made some cheesy steamed kale using nutritional yeast flakes and served it with some parsnip chips made using New Zealand Honey.

Served with ketchup on the side of course.  This tasted lovely!  Rather than frying the burger I baked it in the oven, but I think I prefer the crispy outside edges that are created when they are fried.

After dinner I ate this:

A chopped peach with plain soya yoghurt mixed with some strawberry protein powder, almonds, dried cranberries and sunflower seeds.  A great way to end this weeks WIAW!
