For the love of oats…

Happy Friday!  I’m so glad its the weekend.  This week has been a little hellish for me for many different reasons, I’m so glad that is over.  Thank you all for your kind comments on yesterdays post.  Life is tough and full of big decisions that have to be made.  It wouldn’t be called life other wise.  Some one once told me that “life isn’t complicated, but it is the decisions that we make that make it complicated.”  I have always thought that this avowal was profound and have always kept in the back of my mind.  I guess in some respect we are our own makers. Making huge decisions is a scary prospect as it can mean a serious impact on your life, but it can also be exciting.  I have so much to look forward to and cannot wait to see what is around the corner.

Phew! That was deep, lets lighten things up a little…

I woke up this morning thinking about oats.  I probably dreamt about them too, but that I cannot remember.  I do love my oats, especially warm with banana and peanut butter that melts and goes all gooey.  It has been a while since I’ve had a bowl of oats, not since Sunday in fact!  Shocking I know- I have know idea how I have survived either!

Ok, so this week I have had delicious green smoothies…

I have tried socca for the first time…

I also had some overnight oats that were very delicious too…

…but nothing beats a huge bowl of warm oats loaded with yummy toppings.

I had to give in to my cravings and for breakfast today I made a mega bowl of warm oats made with almond milk and loaded with blueberries, a banana, peanut butter and Yeo Valley fruit compote…

Oats I do love thee! 🙂

Ok so that’s enough oat love- what else did I eat today?

Lunch was straight from the freezer…

I could do another post about how much I love my freezer for stashing away goodies for a later date, but I wouldn’t want to bore you with that! I also ate two oranges and some delicious cherries.

Pre-work out snackage came in the form of a really large pear and two of my Guilt-Free Gingerbread Cookies pulled straight from the freezer.  I baked these cookies at Christmas and they were still yummy- freezer love!

Whilst at the gym I did 30 minutes on the cross trainer and 10 minutes on the bike.  I’ve been feeling really run down all day and couldn’t get through any more cardio.  Instead I completed my toning workout and felt better for taking things a little easier today.  I’m sure my body will thank me tomorrow on my rest day. 

For dinner tonight I made a curry made from mushrooms, red cabbage, red peppers, onions and spinach and served it with some steamed kale topped with mixed seeds.

The mushrooms were great in this.  They added a filling and almost meaty texture to the dish, a great way to pack out a meatless meal. I didn’t miss the meat at all- a common occurrence these days.  For dessert I had two chopped pink lady apples with some Montezuma Sea Dog dark chocolate and a few squares of some Vivani Mango dark chocolate from my chocolate stash that I picked up the other week.  

Tomorrow I don’t have to work…annual leave!  JOY! I have a little shopping trip planned and some exploring of Leamington Spa tomorrow.  I do love the cafe culture and boutique feel of that place.  There are so many deli’s, independent coffee shops, health food shops (eek!) and restaurants.  Not forgetting the fabulous shopping too.  I will also be baking a fruit cake for my lovely Nan and some red velvet cupcakes for my Mum as I plan to visit them on Sunday.  Some relaxation will be squeezed in there somewhere too. Do you have any special plans for the weekend?

Obviously, if you didn’t know by now oats are my favourite breakfast staple.  Even Alfie has jumped on the band wagon and swapped his Crunchy Nut cereal to oats because they are oh so good! 

What are your breakfast must haves that you have on a regular basis?
